There are plenty of activities on shore, but the Dragon's Breath zip line at Labadee is far and away the most popular. Specialty restaurants Izumi Sushi and Jaime's Italian were my other two favorites. Izumi Sushi doesn't require reservations and is inside Izumi Hibachi, which does require reservations. The hibachi seats were full the night I dined there, and the sound of Japanese knives and comedian chefs gave the restaurant an upbeat dinner-and-a-show vibe.
